Did you know that the heat from chili peppers helps combat nasal congestion and even has antibacterial properties? I kid you not. Somehow after my recent trip to San Francisco, I managed to come down with an awful cold and the congestion is driving me crazy.

When that happens, nothing works better than a huge bowl of my family favorite easy chili in the crock pot.

There are some days that I just do not have time to make dinner at dinner time. I’ll be honest, there are days I send my husband out for pizza for him and the kids.

I try not to because I know it’s not the healthiest choice, but it happens. I try to have healthy alternatives on hand and when I plan ahead, I can get something in the crock pot.

Chili in the crock pot is one of my favorites because it’s gluten fee and everyone enjoys it.

Do you brown meat before crock pot chili?

Yes, you will need to turn on your slow cooker and brown the meat before you add the rest of the ingredients. use the sautee function if you have one. 

Otherwise, just turn it to high and cook the ground beef until it is no longer pink inside.

How long can you leave chili in the crockpot on low?

To cook this on low, you can leave it for 8 hours. I often do this when I have to work during the day. My husband can easily switch it on when he gets up. And, it is ready for dinner.

What should I serve with chili?

The guys have their chili with a roll or bread. Sarah enjoys her chili on rice. I enjoy mine plain – even though I know beans aren’t Paleo. It’s a nice treat every now and then and it’s a sure-fire cure for my sinus congestion.

You can easily serve this easy chili in the crock pot as is since it’s a complete meal on its own. Or, you can add in a side salad if you want more vegetables.

Tips for making crockpot chili

To get the flavors really mixed up well, I saute the ground beef and vegetables in olive oil before I toss it in the crock pot. If you are pressed for time, you can skip this step. But, it really does help and it tastes amazing!

These crockpot liners make cleanup so much easier. They are also BPA-free and made in the USA. That’s so important when using liners.

How do I store leftovers?

If you have leftovers after dinner, simply place them in an airtight container and place them in the refrigerator. You should use them up within 3 to 5 days.

If you want them to stay longer than 3 to 5 days, you can freeze them in a freezer container. This easy crock pot chili will stay good for up to three months when frozen.

To use it, defrost it in the refrigerator overnight. Then, heat it slowly in a pan on the stove. Or, microwave it until it’s warm.

Ingredients

  • 3 tablespoons olive oil or avocado oil
  • 1 yellow onion, chopped finely
  • 1 green pepper chopped finely
  • 3 garlic cloves, smashed
  • 1/4 cup chili powder
  • 1 tbsp ground cumin
  • 2 pounds of ground beef
  • 3 10 ounce jars of salsa (however hot you like it)
  • 1 can of black beans
  • 1 can of red kidney beans
  • 1 small can of green chilis, drained

Instructions

  1. If you want to, saute the ground beef, pepper, garlic, chili powder, cumin, and onion in oil. Then put into the crock pot. Otherwise just put it all in the crock pot except the chilis.
  2. Cook on high 4-6 hours or low 8-10.
  3. Add the chilis 30 minutes before it's done.

  2. Chili sounds good even though it will be in the 90s here today. I cook my beans on my gas stove with chili peppers since gas is less expensive than using electricity here. Any more than one dried pepper and it's too hot for me! I think you're probably better off with beans rather than beef so I don't totally go for the paleo eating regime. I need a ton of fiber and beans work better for my IBS. I'm more into eating unprocessed, whole food, and I don't think that has a label, other than healthy.
