Easy Meatless Meals for Lent: Pasta with Peas

This is one of my favorite easy meatless meals! Have I mentioned lately that I’m the one that has to be healthy but everyone else can get sick?

This week, everyone in the house is sick, including me. Unfortunately, I have a lot of deadlines due this week and I’m in the middle of a few projects so that means I don’t get to be sick right now.

Since I decided that giving everyone cold cereal for dinner wouldn’t be a great idea, I’m turning to one of my favorite easy meatless meals for Lent – Pasta with Peas. 

Before you click away because Pasta with Peas doesn’t sound very good, trust me, it really is delicious. It’s creamy without a huge amount of extra calories like an alfredo sauce but it still has a lot of taste.

What do you eat on Meatless Friday?

There are lots of different meatless meals you can enjoy that you probably eat regularly and just haven’t thought of. Fish and seafood are typically allowed by the Church on Meatless Friday and during Lent. Here are a few of my favorites.

  • Broccoli quiche
  • Cheese pizza
  • Ravioli or tortellini and marinara sauce
  • Tortillas with refried beans and cheese
  • Potato soup
  • Fettuccini alfredo with broccoli

This is a super easy meal for a busy night and it still manages to be healthy. Cottage cheese is slightly lower in calories than ricotta and is also less expensive so if those are things that are important to you, you can substitute cottage cheese.

I don’t notice any difference in taste personally when I do this. You can easily make this a gluten-free meal by using gluten-free pasta.

Enjoy this easy meatless meal during lent or anytime you want to save money on your grocery bill.

What can you eat for Lent besides fish?

Tuna tends to be one of my favorite meatless meals for Lent because it’s affordable. But, there is no reason that you can’t enjoy seafood. Why not consider scallops, lobster, shrimp, or clams.

Seafood tacos

Or, salmon would be a nice change from tuna.

Pasta with peas recipe

This is one of my favorite meatless meals for Lent. It’s relatively inexpensive. And, it’s very simple to make. 

You can serve it as a side along with salmon if you don’t think it will fill everyone up as the main dish.

Did you know that one cup of peas has 8 grams of protein? That’s why it makes the perfect choice for this meal.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 12 ounce box of pasta of your choice
  • 1 small bag of snap peas (ends removed)
  • 1 tsp minced garlic
  • 1 small bag of frozen peas
  • 2 tbsp butter
  • 1 tbsp chopped fresh tarragon
  • 1 cup of ricotta or cottage cheese
  • salt and pepper to taste

Instructions

  1. Cook the pasta until almost done according to package directions.
  2. Add the snap peas (to the water) and then one minute later the frozen peas (to the water).
  3. Drain and keep one cup of pasta water.
  4. Put the pasta and the peas back in the pot.
  5. Add the butter, garlic, tarragon, and ricotta with about half of the reserved pasta water.
  6. Stir until the sauce coats the pasta, adding more water if needed.
  7. Add salt & pepper and serve.

  1. This is great! I always have a hard time coming up with meatless recipes for lent... we usually fall back on good old cheese pizza. Haha!
