Ingredients

  • 1 pound boneless skinless chicken breasts or thighs cut up & cooked
  • 1 tbsp olive oil
  • 1 green pepper, sliced thinly
  • 1 onion, chopped finely
  • 2 tsp paprika
  • 1 cup chicken broth
  • 1 can of Muir Glen Diced Tomatoes (14.5 oz)
  • 1 tbsp lemon juice
  • 1/3 cup sour cream
  • salt & pepper to taste

Instructions

  1. Cook the chicken in olive oil until browned.
  2. Add the peppers and onions and cook until soft.
  3. Add the chicken broth and cook until reduced by half.
  4. Add tomatoes and simmer, turning the chicken occasionally, until the chicken is cooked completely.
  5. Remove from heat and stir in the sour cream. Serve.
