Chicken Cordon Bleu is French for Blue Ribbon Chicken. It’s a dish that is essentially chicken that is breaded and wrapped around a center of cheese and ham. I’ve also seen some recipes use bacon instead of ham but I think that ham is probably traditional.

Easy Chicken Cordon Bleu Recipe

Some Chicken Cordon Bleu recipes call for wrapping your chicken breast around the ham and the cheese much the same way that you make a jelly roll.

I have never been successful using this method. No matter how hard I pound the chicken breasts flat, they just do not roll properly. What I end up with is a giant mess. Instead, cut a pocket into your chicken breast and slide the cheese and ham inside.

This method is so much easier than trying to pound chicken breasts flat and roll them up. While I really like them with the Panko breadcrumbs, you can make them with regular breadcrumbs as well if that’s what you have on hand.

Just make sure that you spray it with olive oil before you bake it.

That’s what makes it crispy on the outside. You don’t need to buy the aerosol sprays at the store. I use an olive oil mister and simply refill it with olive oil when it’s empty. There is much less waste that way.

If you’re wondering what to put on top of the Chicken Cordon Bleu recipe when it comes out of the oven, my husband prefers gravy.

However, it’s more traditional to create a Dijon sauce or even a cheese sauce to pour on top. It’s entirely up to you.

What to serve with Chicken Cordon Bleu

Since you’ve already breaded the chicken and added extra meat, cheese, and sauce, I recommend that you stick with a simple side salad or steamed broccoli as a side.

If you absolutely must, you can add a loaf of French bread for people to eat if they want to. You really don’t need anything too heavy or filling.

Healthy Chicken Cordon Bleu

Finding a healthy Chicken Cordon Bleu is challenging.  You can certainly leave off the olive oil spray and the breadcrumbs.

It won’t be crunchy when it comes out of the oven but it is still quite tasty. You can also eliminate the extra gravy or sauce on top to cut calories and fat.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 cup Italian seasoned Panko breadcrumbs
  • 1 tsp pepper
  • 1/2 tsp salt
  • 4 chicken breasts
  • 1 Tbsp butter
  • 3 tbsp mayonnaise (not salad dressing)
  • 1 tsp Dijon mustard
  • 4 slices of ham, thin
  • 4 (3/4 or 1 oz) Swiss cheese slices, halved
  • non stick olive oil spray

Instructions

  1. Preheat the oven to 350F.
  2. Mix the mayonnaise, mustard, salt and pepper in a small bowl.
  3. Spread the breadcrumbs on a flat cookie sheet.
  4. Cut a slit in the center of each chicken breast
  5. Layer a piece of ham and a piece of cheese inside.
  6. Cover the outside of the chicken with the mayonnaise mixture.
  7. Roll in breadcrumbs.
  8. Spray the outside of the chicken with olive oil spray.
  9. Bake for 30 minutes or until cooked through.
  10. Let sit for 5 minutes before serving.

  1. Your right this is easy, and healthy also. When I do make it I usually flatten out the meat, roll it with the ham and cheese, fry it and finally bake it. It's good but time consuming.
