Are you one of those people who forgets to take the butter out of the refrigerator to soften it when you want to bake cookies? I cannot tell you how often I have a little bit of time in my schedule, decide to make cookies, and realize I can’t because the butter I have is hard as a rock.

The recipe never comes out the same if you melt the butter or try to soften it in the microwave. The cookies end up spreading all over the place.

I have found the best recipe in the world for oatmeal chocolate chip cookies without butter. No, they don’t use margarine either. I don’t use margarine at all in my kitchen.

This recipe using olive oil and is absolutely amazingly delicious. No one will ever be able to tell and you won’t have to wait for the butter to soften either.

Substitution for butter in cookies

These really are the best chocolate chip pecan oatmeal cookies I’ve made. But, better than that, these are healthy oatmeal pecan cookies. And, for those that are avoiding butter, using olive oil instead is a great substitution.

If you prefer oatmeal raisin chocolate chip pecan cookies, feel free to add a few handfuls of raisins to the batter. This recipe is a great base for whatever add-ins you like. You could even leave out the chocolate chips if you prefer.

Cook Time 12 minutes
Total Time 25 minutes

Ingredients

  • 1 cup of olive oil
  • 2 eggs
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup oatmeal
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350F.
  2. Mix the sugars and olive oil in a large bowl.
  3. Add everything else except the oatmeal, pecans & chocolate chips. Mix well.
  4. Add oatmeal, pecans and chocolate chips. Mix well.
  5. Roll cookie mixture into walnut sized balls.
  6. Place on parchment paper.
  7. Cook 12 minutes. Makes 3 1/2 dozen cookies.

  1. Ellen, these look lovely. I have used olive oil in a pinch in other recipes (brownies a time or two) and not had any issue. i love the idea of using it in place of butter or margarine in these. Cannot wait to try them!

  3. Baking cookies is always a good idea. I love the combination of chocolate chip and oatmeal. I'm not a fan of pecans so I'd leave those out.

  10. I love that you don't need butter for this! I have made chocolate chip cookies and food processed walnuts so my kids didn't know they were there. I bet I could do the same with pecans. I love pecans myself.

  11. Oh, Ellen, you know I'm gonna have to make these. Your last chocolate chip cookie recipe, the big cookies, have become our favorite recipe. No joke. My oldest asks for them every time I make choc chip cookies.:)

  12. I love oatmeal cookies, but most people make them with raisins - I can't stand fruit in desserts! The combination of chocolate and pecans in these cookies sounds delish!
