Have you ever had a busy Saturday where you completely forgot about dinner? These past few weeks have been crazy, especially the weekends. Our refrigerator died. My desk broke. Our phone stopped charging. I’ve been searching for a few simple meals to make on a busy Saturday and have decided that my Instant Pot is the answer. There are just so many different types of things that you can prepare in them and they are almost all ready in less than an hour even when I forget to defrost something.

If you aren’t familiar with the Instant Pot, it’s a programmable pressure cooker. Unlike pressure cookers that our parents and grandparents used, it has a lot of safety features that make me feel better. I used to freak out about using a pressure cooker before trying the Instant Pot, but it’s so easy that I use it regularly now.

The Instant Pot is one of the most versatile kitchen appliances I’ve ever owned. You can do everything from making bone broth to making yogurt in it. Unlike a slow cooker that cooks dinner over 6-8 hours, an Instant Pot uses pressure to have dinner ready (and just as tender), in just an hour or so depending on the recipe.
What’s your favorite meal to prepare in the Instant Pot?
