Making oatmeal cookies was a weekly event at my house when my kids were younger. They are a wholesome treat that the kids asked for every day when coming home from school. Over the years, my recipe has evolved a bit. And, I wanted to share it with you today.

Honey Oatmeal Cookies with Walnuts

Whenever I think of oatmeal cookie recipes, I think of my mom baking oatmeal cookies for me when I was little. Mine always had raisins in them but since my husband doesn’t like raisins, I’ve created these cookies with walnuts instead.

I also added honey to them for a delicious flavor without using refined sugars. You can use your favorite honey from the grocery store. Or, try this Horchata honey for something a little bit different.

If you want to make honey oatmeal cookies with no sugar, this is the recipe you need. Avoiding processed white sugar can be difficult when making cookies, but it’s really not needed here.

Oatmeal cookies are the very best comfort food. You can bake up a batch in no time at all. It’s so hard not to eat a whole batch at once when I make these.

  • Cookie sheet or baking sheet
  • Cookie scooper (I like this one)
  • Parchment paper
  • Wire rack
  • Mixer with dough stand (optional)

Honey oatmeal cookies ingredients

  • 2 cups old fashioned rolled oats (not quick cooking oats)
  • 1/2 cup Ocarina Horchata Premium Flavored Honey (try raw organic honey for a similar product)
  • 1/2 cup light brown sugar
  • 1 cup shortening
  • 1 tsp salt
  • 2 cups all-purpose flour (do not use whole wheat flour)
  • 2 eggs
  • 4 tbsp milk with 1 teaspoon baking soda added to it
  • 1 cup walnuts, chopped

What type of honey is best?

I’ve used Horchata honey because I love the honey flavor. You can really use any type of honey from the grocery store. Just be sure that you use real honey.

How to make honey oatmeal cookies

  1. Preheat oven to 350.
  2. Cream together brown sugar and shortening.
  3. Add eggs, honey, milk, salt, and baking soda.
  4. Mix. Add flour and mix again.
  5. Stir in oats and chopped nuts.
  6. Drop cookie dough by spoonfuls on greased baking sheet.
  7. Bake 350F oven for 10 minutes until edges start to turn golden brown.
  8. Allow them to cool completely.
  9. Makes about 3 1/2 dozen small cookies

How do I store honey oatmeal cookies?

Store these honey oatmeal cookies in a sealed container for up to two weeks. Oat cookies will be slightly soft so it’s best to use an airtight container.

Can I freeze honey oatmeal cookies?

Yes, you can freeze oatmeal cookies. Make sure to place parchment paper or wax paper between each cookie before placing them in a freezer bag. This will prevent the cookies from sticking together and save space in your freezer too!

Are these gluten free?

I’ve used all purpose flour in this recipe. So, if you want to make gluten free honey oatmeal cookies, you will need to use a one-to-one gluten free flour instead. Look for it in the area of your store that carries dry ingredients for baking.

Can I use margarine?

I make this recipe with shortening because it cooks up perfectly this way. I’ve never tried margarine, butter (unsalted or otherwise), or coconut oil.

Using these can cause the cookies to spread. If you want to experiment when making these oat cookies, please let me know how they turn out.

Can I add chocolate chips?

I love adding chocolate chips to my oatmeal cookies. It’s not part of this recipe but I’m planning on making these soon with Ghirardelli semi-sweet chocolate chips.

Can I use whole wheat flour?

I have never tried this recipe with anything but all purpose flour. Making cookies with whole wheat flour can change the texture quite a bit. You will need to experiment and see how it works for you.

Optional add ins for honey oatmeal cookies

Why not stir in one or two of these add ins when you make this recipe? Don’t use more than about two tablespoons of add ins or you may change how it cooks.

  • Ground cloves
  • Cinnamon
  • Nutmeg
  • Cranberries
  • Raisins

Can I use maple syrup instead of honey?

Yes! Maple syrup is a delicious replacement for honey. I haven’t tested this recipe with maple syrup, but I’m sure it will turn out just fine. You may want to use a bit less since maple syrup is not as thick as honey.

Let your kids get creative and add whatever they want to these oatmeal cookies. They will have so much more fun eating the oatmeal cookies if they help make them.
