If you’ve ever made vegetable soup before, you’ll probably remember that there is a heck of a lot of chopping involved. My raw garden vegetable soup recipe has cucumbers, tomatoes, onions and a whole lot of herbs.

As the season winds down, we use lots of zucchini and tomatoes in this recipe. We have so many fresh vegetables that we need to use up. Just be sure to remove the seeds from the zucchini first.

Since this is a personal blender, I can make everyone their own soup. My Dad cannot eat onions so it’s very easy to just leave them out of his. My husband prefers a bit more heat to his food so I can add extra onions to his without everyone having to have them.

I’m all about Mason jars so I was thrilled to learn that the (affiliate) Tribest Personal Blender PB-350 has a Mason jar attachment along with all sorts of different jars, cups, lids and bands!  It works with  most regular mouth glass canning jars. That means if everyone wants a smoothie, I can just use the Mason jar as a glass and make one for everyone!

I love garden vegetable soups! Try this delicious raw garden vegetable soup recipe to use up extra garden vegetables. It's one of my favorite raw soup recipes.

Total Time 15 minutes

Ingredients

  • 1 medium cucumber
  • 1/4 small onion, peeled
  • 1/4 cup loosely packed fresh peppermint leaves
  • 1/2 cup loosely packed fresh parsley leaves
  • 3 small tomatoes
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice, fresh
  • salt & pepper to taste

Instructions

  1. Place everything in the Tribest Personal Blender.
  2. Blend for 15 seconds.
  3. Chill and serve.

  1. My kids would definitely be for individual soups! My son's tastes can get a little odd... but a cold, fresh soup would be perfect for these final hot days of Summer.

  2. I like the idea of making "personal sized" soups so that each can be customized. It always seems like there is at least one person who has special food considerations or else is just picky!

  5. What a clever idea to blend up soup for everyone's personal tastes. I don't care for onions, so I always make my husband (who loves them) go without. Sounds so simple, but I never thought about blending the ingredients separately!
