Paleo Strawberry Shortcake Recipe

Of course, since I’m trying to follow the Paleo diet, traditional biscuits are not on my list of things to eat. Thankfully, with a bit of playing around with my traditional recipe, I have discovered a pretty good Paleo biscuit recipe.

For those not familiar with the Paleo diet, it rules out all grains – even traditional gluten free grains like rice.  The Paleo diet does allow you to use things like almond flour and coconut flour in your baking.

This Paleo strawberry shortcake recipe uses almond flour so it is safe for both paleo and gluten free lifestyles.  There is no dairy so it’s perfect for those with a dairy allergy.  

To make this vegan, substitute stevia or maple syrup for the honey and use an egg replacer for the eggs.

The strawberries in traditional strawberry shortcake have been cooked in sugar which is really not necessary.  Fresh spring strawberries are juicy and sweet all by themselves.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • Biscuits:
  • 3 cups of almond flour (finely ground)
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 2 eggs, farm fresh
  • 2 tbsp local honey
  • 1 tbsp lemon juice
  • Fresh organic local strawberries

Instructions

  1. Preheat the oven to 325F.
  2. Line a cookie sheet with parchment paper.
  3. Mix the dry ingredients. Make a well in the center & add the liquid ingredients.
  4. Stir until a dough is formed.
  5. Drop by large spoonfuls onto the cookie sheet. Flatten slightly.
  6. Bake about 20 minutes, checking after 15.
  7. Top with fresh strawberries. If desired, top with coconut whipped cream.

  6. Sounds delish! Just wanted to mention though- the headline says these are vegan, they are not. You may want to take that off the headline before a vegan comes and rips your head off.

    • Hi Gloria - If you read the recipe, it mentions that by using egg replacer, this recipe is vegan. If you keep the eggs in, it won't be. Hope you try it. It really is good!

    • Bobs Red Mill is the brand I buy. I find it at our food co-0p but a larger store would have it in their gluten free area.

  10. I love that you used ALmond flour and natural sweeteners. I can imagine it's flavor already. I love baking with Almond flour. It's not as gritty as other flour substitutes and offers a great flavor too.

  13. Yummy fun! This sounds like a great recipe, I have a lot of these ingredients on hand, can't wait to try it! And... I used to absolutely adore watching Strawberry Shortcake.  I used to also have the dolls that smelled like the fruits. There was strawberry, blueberry and even lemon!
