Two things that I always have too much of in the summer are tomatoes and eggs.  I always plant tomatoes in the garden and our chickens are generally laying pretty well by that time.  I decided to try to use up a few of both in this Paleo frittata recipe. 

Some frittata recipes call for the addition of milk and cheese which are not Paleo.  This Paleo frittata recipe doesn’t so it’s a great choice for breakfast or a light lunch.

Dairy free frittata

Making a dairy free frittata is what makes this Paleo frittata recipe technically Paleo. Sometimes, people add milk and cheese to their frittata recipe.

Since you cannot have either of those on the Paleo diet, that doesn’t work. But, since this recipe doesn’t include dairy items, you can enjoy it if you follow the Paleo diet.

What should I put in this Paleo frittata recipe?

Frittatas are very versatile. You can easily change up what you put into it. So, if you have fresh mushrooms or asparagus, you can add those too. If you’d rather use garlic or scallions instead of onion, that works just as well.

If you’re out of bacon, you can add in sausage or leftover ground beef. Making a frittata is a great way to use up leftovers or an excess of garden produce.

There are a lot of different ways to make a Paleo vegetable frittata. A Paleo spinach frittata is a great choice for early spring before the tomatoes are ripe.

If you have a summer garden as I do, a tomato basil frittata is a perfect way to use up your excess garden product. For some reason, my basil plant is just going crazy this year and I have so much to use up.

What should I cook a frittata in?

I really love the way this Paleo frittata recipe turns out in my cast iron pan. It’s important that you liberally grease it to be sure it doesn’t stick. I use an organic olive oil spray on mine.

I love this refillable bottle because you can fill it with whatever type of healthy oil you choose to use. That means there is less waste in disposing of an empty spray can.

Tips for making the perfect frittata

When slicing your tomatoes, it’s important you get even slices so they cook through properly. This tomato slicer is easy to use and can also be used for slicing hard-boiled eggs.

Don’t rush when making your Paleo frittata recipe, if you use slow even heat, it will turn out just fine. Just don’t rush and turn the heat up too high or it will burn before it is cooked through.

Keto frittata

If you follow the Keto diet, you can definitely still enjoy this Paleo frittata recipe. Everything I have used in this recipe is allowed on the Ketogenic diet. Plus, you can add in some high-quality dairy if you want to.

It’s not required, but some raw milk cheese would be good sprinkled on top of this frittata as well.

There are a lot of different variations you can use to make a Paleo frittata recipe. You can try a Paleo frittata casserole like this one from Nom Nom Paleo. Or, you can try my Paleo egg cups and add chopped fresh veggies to turn it into Paleo frittata muffins.

When I make my Paleo egg cups, I use a muffin tin. And, it’s very important that you spray olive oil generously into each muffin cup to ensure that it doesn’t stick. If you want to, you can always grease it with coconut oil if you prefer.

You are going to love this Paleo Frittata Recipe - Tomato Bacon and Fresh Herbs

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 12 farm fresh eggs
  • 8 to 10 slices of bacon (pasture raised preferred)
  • 3 or 4 garden fresh tomatoes depending on the size (organic is best), sliced very thinly
  • onion, sliced or diced thinly
  • fresh basil and oregano leaves to taste
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350F.
  2. Fry your bacon in a 10" cast iron skillet.
  3. Let the bacon cool slightly and crumble it. Leave the grease in the pan.
  4. Whisk the eggs and the herbs together in a bowl.
  5. If there is too much bacon grease, you can drain some off but leave enough so the eggs don't stick.
  6. Sprinkle the bacon in the pan evenly and pour the egg/herb mixture over it.
  7. Cook on medium heat until almost done.
  8. Add the tomatoes, onion and herbs to the top.
  9. Cook in 350F for about 15-20 minutes or until the top is set.
  10. Remove and serve warm.

  3. I'm definitely going to have to try this out! I love eggs, tomatoes and bacon. Add some fresh herbs, mushrooms and onions and I'm in heaven. We sure could use a change of pace from our regular weekend breakfasts. Now, I just have to get the S.O. to eat fresh spinach and tomatoes.
