I only eat butter on my toast and bread. I do not eat margarine for health reasons. And, I really do not like the fact that butter is hard and unspreadable out of the refrigerator.
Thankfully, there is a trick! When I received a sample of Pompeian Extra Olive Oil as part of the Smiley360.com program, I knew that I was going to show you how to make butter spreadable.
There is just about nothing that tastes better than butter spread on fresh homemade bread. I love spreading it on corn bread and on quick breads as well.
Since butter is generally rock solid when you remove it from the refrigerator, I have to leave it on the counter to get it to soften.
Since I prefer not to do that, I needed to learn how to make butter spreadable even if I stored it in the refrigerator. I know that I can buy spreadable butter in the grocery store but honestly it costs so much money that I knew there had to be a better way.

Ingredients
- 1 cup of softened butter, salted
- 2/3 cup of Pompeian Extra Virgin Olive Oil
Instructions
- Whip the butter until it is soft and fluffy.
- Very slowly add the Pompeian Extra Virgin Olive Oil, scraping down the sides occasionally.
- Put it into a container with a lid & store in the refrigerator. The mixture will be very soft until you refrigerate it. That is fine.
