I’ll let you in on a secret. I don’t make a dozen different cookies for Christmas. I have a few favorites that I make each year and then I swap with my Mom who also makes a few favorites. That makes it seem like I made more cookies than I actually did. One of my favorite cookies to make is these Easy Sugar Cookies with Maple Frosting because they require no rolling and no chilling.

While I enjoy baking, for the most part, I hate rolling things out. I don’t make my own pie crust or make cookies that need to be rolled. Thankfully, these easy sugar cookies don’t have to be rolled at all. You just make them into a ball and then flatten them slightly with the bottom of a glass.

Learn more about where maple syrup comes from. For this recipe, Grade B maple syrup is best because it is darker and has a more robust flavor. But, if all you can find is Grade A, you can certainly use that as well.

Sometimes, I dip the bottom of the glass in sugar before I flatten them but, this time, I decided to make a simple maple frosting to go on top. Maple syrup always reminds me of when I was little and we got to enjoy maple sugar candy. It’s a tradition in Vermont to have real maple syrup, so please don’t use the artificial kind. We use maple syrup from the trees in our back yard.

Depending on how much powdered sugar you use, this maple frosting can be more like a maple glaze or maple icing. The more powdered sugar you add, the thicker it will be. Experiment until you have the consistency you like.

Ingredients

  • 1 cup of white sugar
  • 1 cup of butter, softened
  • 1 teaspoon of real maple syrup
  • 1 egg
  • 2 1/3 cups of Bob's Red Mill Unbleached White All Purpose Organic Flour
  • 1/2 teaspoon of baking soda
  • Maple Frosting (1 cup of powdered sugar, 2 tablespoons real maple syrup, milk to thin with if necessary)

Instructions

  1. Heat oven to 375F. Line a cookie sheet with parchment paper.
  2. Beat the sugar and the butter until creamy. You can use an electric beater if you want.
  3. Stir in 1 teaspoon of real maple syrup and the egg.
  4. Stir in flour and baking soda.
  5. Shape the dough by teaspoonfuls into balls.
  6. Place on parchment paper and flatten slightly with the bottom of a glass. Be sure to flour the bottom of the glass to avoid sticking.
  7. Bake about 10 minutes and allow to cool on rack completely before frosting.
  8. Mix the powdered sugar and real maple syrup together in a small pot and heat on low heat. Ensure there are no lumps. You can thin with milk if necessary.
  9. Frost quickly and enjoy!

I just opened a bag of Bob's Red Mill Flour, my first time using his unbleached all purpose white flour my pie crust came together beautifully and the crust was really easy to roll, was flaky and just like my grandma's. I'm going to try your recipes I've always like maple fudge so I'm sure these cookies will be delicious
